I've been sick with a bad cold for the last two weeks as well as being overwhelmed with working on my thesis for my looming deadline, so cooking has fallen low on the totem pole of responsibilities. Getting sick of my usual take out rotations, I decided to shake things up a bit and did a search for other gluten-free offerings in the area. I am so glad I did because Silver Diner popped up and blew my mind with their menu! I decided to go for comfort food and got the coconut and quinoa pancakes. Stuffed with blueberries and topped with strawberries and bananas, they were healthy as well as delicious! The portion was also huge and left me with leftovers for breakfast the following morning.
I knew Silver Diner was big on their fresh offerings and the whole farm to table concept. But I had no clue how well-versed and accommodating they were for the gluten-free population.
