I'm still on my oatmeal kick to help my milk supply. But I don't always have the time to wait for a two hour slow cooker recipe to cook. So here is another delicious recipe that only requires a quick bake in the oven. I tweaked it to make it dairy-free as well as gluten-free. Here's what I did.
3 cups of quick gluten-free oats 1/2 cup of brown sugar 1 cup of coconut milk (You can also use regular milk) 2 TBSP of coconut oil softened (You can also use butter) 2 eggs 2 tsp baking powder 1 TBSP salt 2 tsp vanilla 1/2 cup of peanut butter
1) Mix all the ingredients together and stir well. 2) Spread in a greased pan. 3) Bake at 350 for 20-25 minutes. 4) Serve with warm coconut milk poured on top. Enjoy!
