3 medium peeled uncooked sweet potatoes cut into 1 inch cubes
1 large uncooked onion chopped
29 oz canned diced tomatoes, salsa style with chile peppers, undrained
14 1/2 oz chicken broth
1 tsp dried oregano
1/2 tsp ground cumin
1 bag of frozen unthawed corn (approx 1 1/2 cup)
1) Chop and mix all ingredients except corn in 4qt or larger slow cooker pot.
2) Cook for 6 hours on low.
3) Throw in corn for the last 45 minutes before serving.
